Microgreens are a fun and nutritious way to eat your vegetables! Microgreens are the same varieties as the large vegetables, However, seed used for microgreen production generally have very high germination rates and are completely untreated. This means the seed has not been treated with any fungicides or pesticides, It is simply cleaned and packaged. Even organic seed can sometimes be treated with organic fungicides and pesticides which is not safe for microgreen production.
The nutrional side of microgreens is amazing. These little super foods pack 10-40 times more nutrition and antioxidants than their full grown counterparts! They are very high in Iron and protein and add a great boost to your dishes.
Where microgreens really shine is in their flavors colors and textures. They all taste similar to the full grown vegetables. Some are on the mild and sweet side like Red Russian Kale or Red Amaranth, and some are on the zesty/spicy side like Purple Radish and Mustard. There is a rainbow of different colors and flavors to decorate your favorite dishes and make them come alive with edible art!
Microgreens are often confused with sprouts but they are actually very different.
With Sprouts you are consuming a germinated seed which consists mostly of the root and a small portion of the growing tip. Sprouts are grown in complete darkness in very high humidity and for a very short period of time, usually between 5-12 days.
With Microgreens you are consuming everything except the roots, consisting of the stem and the leafy portion of the green. Our microgreens are greenhouse grown much like traditional salad greens and other vegetables.
They are grown under natural sunlight with full air circulation for 12-21 days and for this reason develop higher nutrition and stronger flavors than sprouts.

We grow our microgreens under the sun in our greenhouse here in Skagit Valley, Washington.
We use a specially mixed organic soil and only use organic/non gmo seed from companies with great reputations and high standards. We are passionate about healthy living and proudly use no chemical fertilizers or pesticides anywhere on our farm.
When we first started doing this for farmers markets we would stay up until all hours of the night harvesting and packaging our greens.
This is how we came up with our name The Midnight Farmer.
Now we bring our flats of microgreens straight from the greenhouse to the farmers markets harvesting them fresh as customers order them. This allows people to make their own custom mixes and get their microgreens as fresh as possible! We also offer weekly delivery every Thursday of our 10 inch by 20 inch flats of LIVE microgreens.
